Instructions:
Preheat the oven to 375°F (190°C).
In a skillet, cook the ground beef and chopped onion over medium heat until the beef is browned. Drain any excess fat.
In a baking dish, layer the sliced potatoes and cooked ground beef mixture.
In a bowl, whisk together the eggs, milk, salt, and pepper. Pour this mixture over the potatoes and beef in the baking dish.
Sprinkle the shredded cheese on top.
Bake in the preheated oven for 45 minutes, or until the eggs are set and the top is golden brown.
Let the casserole cool for a few minutes before serving.
Notes:
This casserole is great for meal prep and can be stored in the fridge for up to 3 days.
