Ingredients:

  • 1 lb ground beef
  • 4 cups potatoes, peeled and sliced
  • 1 onion, chopped
  • 6 eggs
  • 1 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded cheese

Instructions: 

  • Preheat the oven to 375°F (190°C).
  • In a skillet, cook the ground beef and chopped onion over medium heat until the beef is browned. Drain any excess fat.
  • In a baking dish, layer the sliced potatoes and cooked ground beef mixture.
  • In a bowl, whisk together the eggs, milk, salt, and pepper. Pour this mixture over the potatoes and beef in the baking dish.
  • Sprinkle the shredded cheese on top.
  • Bake in the preheated oven for 45 minutes, or until the eggs are set and the top is golden brown.
  • Let the casserole cool for a few minutes before serving.

Notes:

This casserole is great for meal prep and can be stored in the fridge for up to 3 days.
