Ingredients:  

Main Ingredients

  • 1 lb Ground Beef
  • 1 can Corn drained
  • 1 can Black Beans rinsed and drained
  • 1 can Diced Tomatoes with green chilies
  • 1 cup Shredded Cheddar Cheese
  • 1 package Cornbread Mix prepared according to package instructions

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
  • In a large mixing bowl, combine the cooked ground beef, corn, black beans, and diced tomatoes. Mix well.
  • Pour the mixture into a greased baking dish. Sprinkle the shredded cheddar cheese evenly over the top.
  • Prepare the cornbread mix according to the package instructions and spread it evenly over the casserole.
  • Bake in the preheated oven for 30-35 minutes, or until the cornbread is golden brown and cooked through.
  • Let the casserole cool for a few minutes before serving. Enjoy!

This casserole is great for meal prep and can be stored in the fridge for up to 3 days.
