Ingredients:  

Main Ingredients

  • 1 lb Beef tips
  • 1 cup Rice uncooked
  • 2 cups Beef broth
  • 1 cup Mushrooms sliced
  • 1 medium Onion chopped
  • 2 tbsp Olive oil
  • 2 cloves Garlic minced
  • to taste Salt and pepper

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a skillet, heat olive oil over medium heat. Add beef tips and cook until browned.
  • Add chopped onion and minced garlic to the skillet. Cook until onion is translucent.
  • Stir in sliced mushrooms and cook for another 5 minutes.
  • Transfer the beef mixture to a casserole dish. Add uncooked rice and beef broth. Stir to combine.
  • Cover the casserole dish with foil and bake in the preheated oven for 45 minutes, or until the rice is tender.
  • Season with salt and pepper to taste before serving.

Notes:

Feel free to add other vegetables like bell peppers or peas for extra flavor and nutrition.
