Instructions:
Preheat your oven to 375°F (190°C).
Cook the pasta according to package instructions. Drain and set aside.
In a mixing bowl, combine the cooked pasta, marinara sauce, chopped vegetables, dried oregano, and dried basil. Mix well.
Transfer the mixture to a baking dish. Top with vegan mozzarella cheese.
Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool for a few minutes before serving. Enjoy!
Notes:
You can add any of your favorite pizza toppings to this casserole.
