Ingredients:

  • 8 oz egg-free noodles
  • 1 cup frozen mixed vegetables
  • 1 cup vegan cheese shredded
  • 2 cups unsweetened almond milk
  • 2 tbsp all-purpose flour
  • 2 tbsp nutritional yeast
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • to taste salt and pepper

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • Cook the noodles according to package instructions. Drain and set aside.
  • In a saucepan, heat the almond milk over medium heat. Whisk in the flour until smooth.
  • Add the nutritional yeast, garlic powder, onion powder, salt, and pepper. Cook until the sauce thickens.
  • In a mixing bowl, combine the cooked noodles, mixed vegetables, and sauce. Mix well.
  • Transfer the mixture to a baking dish. Top with shredded vegan cheese.
  • Bake for 20-25 minutes, or until the top is golden and bubbly.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

This casserole is versatile. You can add your favorite veggies or use gluten-free noodles if needed.
