Ingredients:

  • 1 cup Grits
  • 4 cups Vegetable Broth
  • 1 cup Nutritional Yeast
  • 1 cup Chopped Spinach
  • 1 cup Diced Tomatoes
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • to taste Salt and Pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a saucepan, bring the vegetable broth to a boil. Slowly whisk in the grits and reduce the heat to low. Cook, stirring frequently, until the grits are thick and creamy, about 5-7 minutes.
  • Stir in the nutritional yeast, chopped spinach, diced tomatoes, garlic powder, onion powder, salt, and pepper. Mix well.
  • Pour the mixture into a lightly greased baking dish and spread it out evenly.
  • Bake in the preheated oven for 30-35 minutes, or until the top is golden and the casserole is set.
  • Let it cool for a few minutes before serving. Enjoy!
