Ingredients:

  • 2 cups cooked lentils
  • 1 cup diced tomatoes canned
  • 1 cup vegan cheese shredded
  • 1 cup onion chopped
  • 1 cup bell pepper chopped
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and cook until softened, about 5 minutes.
  • Add the cooked lentils, diced tomatoes, garlic powder, onion powder, smoked paprika, salt, and black pepper to the skillet. Stir to combine and cook for another 5 minutes.
  • Transfer the mixture to a baking dish and top with shredded vegan cheese.
  • Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  • Let the casserole cool for a few minutes before serving. Enjoy!
