Ingredients:

  • 4 cups carrots, grated
  • 1 cup breadcrumbs
  • 1 cup vegan cheese, shredded
  • 1 cup plant-based milk
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, combine grated carrots, breadcrumbs, vegan cheese, plant-based milk, olive oil, salt, and black pepper.
  • Transfer the mixture to a baking dish and spread it out evenly.
  • Bake for 45 minutes or until the top is golden brown and crispy.
  • Let it cool for a few minutes before serving.

Notes:

This casserole can be stored in the fridge for up to 3 days. Reheat before serving.
