Instructions:
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine corn, lima beans, diced tomatoes, bell pepper, and onion.
Add olive oil, salt, and black pepper to the mixture and stir well.
Transfer the mixture to a baking dish and spread evenly.
Sprinkle shredded cheese and breadcrumbs on top.
Bake in the preheated oven for 45 minutes or until the top is golden brown.
Let it cool for a few minutes before serving.
