Ingredients:  

Main Ingredients

  • 2 cups Corn kernels
  • 2 cups Lima beans
  • 1 cup Diced tomatoes
  • 1 cup Chopped bell pepper
  • 1 cup Chopped onion
  • 1 cup Shredded cheese
  • 1 cup Breadcrumbs
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1 tsp Black pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine corn, lima beans, diced tomatoes, bell pepper, and onion.
  • Add olive oil, salt, and black pepper to the mixture and stir well.
  • Transfer the mixture to a baking dish and spread evenly.
  • Sprinkle shredded cheese and breadcrumbs on top.
  • Bake in the preheated oven for 45 minutes or until the top is golden brown.
  • Let it cool for a few minutes before serving.

Notes:

This succotash casserole is a great side dish or main course. Feel free to add your favorite vegetables or proteins to make it your own.
