Ingredients:  

Main Ingredients

  • 1 medium spaghetti squash
  • 1 lb ground beef
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 1 egg
  • 0.25 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions: 

  • Preheat oven to 400°F (200°C).
  • Cut spaghetti squash in half, remove seeds, and bake cut-side down on a baking sheet for 30-40 minutes.
  • While squash is baking, mix ground beef, egg, breadcrumbs, garlic, Italian seasoning, salt, and pepper in a bowl. Form into meatballs.
  • In a skillet, cook meatballs until browned on all sides.
  • Once squash is done, use a fork to scrape out the strands into a casserole dish.
  • Add meatballs and marinara sauce to the dish, mix well.
  • Top with mozzarella and Parmesan cheese.
  • Bake for another 10-15 minutes until cheese is melted and bubbly.

Notes:

A great low-carb alternative to traditional pasta dishes.
