In a skillet, cook sausage over medium heat until browned. Remove sausage and set aside, leaving drippings in the skillet.
Stir in flour into the drippings until blended. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in salt and pepper. Return sausage to skillet; heat through.
In a large bowl, whisk eggs. Pour into a greased 9x13-inch baking dish. Bake for 10 minutes or until eggs are set.
Remove from oven. Top with sausage gravy, cheese, and biscuit dough pieces.
Bake for 20-25 minutes or until biscuits are golden brown.
Notes:
For a spicier version, use hot sausage and add a pinch of red pepper flakes.
