Instructions:
Preheat your oven to 350°F (175°C).
In a large skillet, heat olive oil over medium heat. Add onions and garlic, cook until softened.
Add mushrooms and cook until they release their moisture and become golden brown.
In a large mixing bowl, combine bread cubes, cooked vegetables, salt, and pepper. Pour in vegetable broth and mix well.
Transfer the mixture to a greased baking dish and bake for 45 minutes, or until the top is golden and crispy.
Notes:
This casserole can be made ahead of time and reheated before serving.
