Ingredients:  

Main Ingredients

  • 1 lb Ground Turkey
  • 1 medium Butternut Squash peeled and cubed
  • 1 cup Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Chicken Broth
  • 1 cup Cheddar Cheese shredded
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Dried Thyme

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook ground turkey over medium heat until browned.
  • Add chopped onion and minced garlic to the skillet. Cook until softened.
  • Add cubed butternut squash, chicken broth, salt, pepper, and thyme. Stir to combine.
  • Transfer the mixture to a baking dish. Top with shredded cheddar cheese.
  • Bake in the preheated oven for 45 minutes, or until the squash is tender and the cheese is bubbly.

Notes:

Feel free to add other veggies like bell peppers or spinach for extra nutrition.
