Instructions:
Preheat oven to 375°F (190°C).
In a skillet, cook ground turkey over medium heat until browned.
Add chopped onion and minced garlic to the skillet. Cook until softened.
Add cubed butternut squash, chicken broth, salt, pepper, and thyme. Stir to combine.
Transfer the mixture to a baking dish. Top with shredded cheddar cheese.
Bake in the preheated oven for 45 minutes, or until the squash is tender and the cheese is bubbly.
Notes:
Feel free to add other veggies like bell peppers or spinach for extra nutrition.
