Instructions:
Preheat your oven to 350°F (175°C).
In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent.
Stir in the diced tomatoes, tomato sauce, salt, and black pepper. Let it simmer for about 10 minutes.
Meanwhile, cook the gluten-free pasta according to the package instructions. Drain and set aside.
Combine the cooked pasta with the beef mixture. Transfer to a baking dish.
Sprinkle the shredded cheddar cheese on top.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Let it cool for a few minutes before serving. Enjoy!
Notes:
This casserole can be made ahead and refrigerated. Just bake it when you're ready to eat.
