Ingredients:  

Main Ingredients

  • 1 lb Chorizo casings removed
  • 1 cup Onion diced
  • 2 cloves Garlic minced
  • 1 cup Bell Pepper diced
  • 1 cup Tomato Sauce
  • 1 cup Cheddar Cheese shredded
  • 2 cups Cooked Rice

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook chorizo over medium heat until browned. Remove and set aside.
  • In the same skillet, sauté onion, garlic, and bell pepper until softened.
  • Stir in tomato sauce and cooked rice. Add the cooked chorizo and mix well.
  • Transfer mixture to a casserole dish. Top with shredded cheddar cheese.
  • Bake in preheated oven for 20-25 minutes, until cheese is melted and bubbly.
