Instructions:
Preheat oven to 375°F (190°C).
In a skillet, cook chorizo over medium heat until browned. Remove and set aside.
In the same skillet, sauté onion, garlic, and bell pepper until softened.
Stir in tomato sauce and cooked rice. Add the cooked chorizo and mix well.
Transfer mixture to a casserole dish. Top with shredded cheddar cheese.
Bake in preheated oven for 20-25 minutes, until cheese is melted and bubbly.
