Ingredients:  

Main Ingredients

  • 1 cup rice uncooked
  • 1 lb ground beef
  • 1 can kidney beans drained and rinsed
  • 1 can diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1 packet chili seasoning mix
  • 1 cup water

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • In a mixing bowl, combine the cooked beef, rice, kidney beans, diced tomatoes, chili seasoning mix, and water. Mix well.
  • Transfer the mixture to a baking dish and spread evenly.
  • Top with shredded cheddar cheese.
  • Bake in the preheated oven for 45 minutes, or until the cheese is melted and bubbly.
  • Let cool for a few minutes before serving. Enjoy!

Notes:

This casserole can be made ahead and refrigerated. Just bake it when you're ready to eat.
