Ingredients:  

Main Ingredients

  • 1 cup black-eyed peas soaked overnight
  • 1 small cabbage chopped
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 2 cups vegetable broth
  • 2 tbsp olive oil

Instructions: 

  • Preheat oven to 375°F (190°C).
  • Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until translucent.
  • Add chopped cabbage, cook until slightly tender.
  • Stir in soaked black-eyed peas, diced tomatoes, salt, pepper, and paprika.
  • Pour in vegetable broth and bring to a simmer.
  • Transfer mixture to a casserole dish, cover with foil.
  • Bake in preheated oven for 45 minutes or until peas are tender.
