Ingredients:  

Main Ingredients

  • 1 cup uncooked rice
  • 1 cup corn kernels fresh or frozen
  • 1 cup chopped onions
  • 1 cup chopped green bell peppers
  • 1 lb ground beef
  • 1 can tomato sauce 15 oz
  • 1 cup shredded cheddar cheese

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • Spread the uncooked rice evenly in the bottom of a 9x13 inch baking dish.
  • Layer the corn kernels over the rice.
  • Next, add a layer of chopped onions, followed by a layer of chopped green bell peppers.
  • In a skillet, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
  • Spread the cooked ground beef over the vegetables in the baking dish.
  • Pour the tomato sauce evenly over the ground beef.
  • Cover the dish with aluminum foil and bake in the preheated oven for 1 hour.
  • Remove the foil, sprinkle the shredded cheddar cheese on top, and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  • Let the casserole sit for a few minutes before serving. Enjoy!
