Ingredients:

  • 6 cups potatoes, peeled and diced
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 packet ranch dressing mix
  • 1 cup milk
  • 1 cup crushed cornflakes for topping
  • 2 tablespoons butter, melted for topping

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a large mixing bowl, combine potatoes, sour cream, cheddar cheese, ranch dressing mix, and milk. Mix well.
  • Transfer the mixture to a greased baking dish.
  • In a small bowl, combine crushed cornflakes and melted butter. Sprinkle over the potato mixture.
  • Bake for 45 minutes or until the top is golden brown and the potatoes are tender.
  • Let it cool for a few minutes before serving.

Notes:

This casserole can be made a day ahead and refrigerated. Just add an extra 10 minutes to the baking time if baking from cold.
