Ingredients:

  • 4 cups diced potatoes
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 3 units eggs
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a skillet, cook the diced potatoes, bell peppers, and onions until tender.
  • In a large bowl, whisk together the eggs, milk, salt, and pepper.
  • Combine the cooked vegetables with the egg mixture and pour into a greased baking dish.
  • Sprinkle shredded cheddar cheese on top.
  • Bake in the preheated oven for 45 minutes or until the casserole is set and the top is golden brown.
  • Let it cool for a few minutes before serving.

Notes:

Feel free to add cooked bacon or sausage for extra flavor.
