Ingredients:

  • 2 cups pineapple chunks drained
  • 1 cup sugar
  • 1 cup shredded cheddar cheese
  • 6 tbsp all-purpose flour
  • 1 cup Ritz crackers crushed
  • 1/2 cup butter melted

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the pineapple chunks, sugar, shredded cheddar cheese, and flour. Mix well.
  • Pour the mixture into a baking dish.
  • In a separate bowl, mix the crushed Ritz crackers with the melted butter. Spread this mixture evenly over the pineapple mixture.
  • Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

This casserole is a great side dish for ham or turkey dinners.
