taco seasoning

black beans
drained and rinsed

can
corn
drained

diced tomatoes with green chilies

cup
shredded cheddar cheese

cup
shredded mozzarella cheese
Salt and pepper
to taste
Instructions:
Preheat oven to 350°F (175°C).
Cook pasta according to package instructions. Drain and set aside.
In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
Add taco seasoning, black beans, corn, and diced tomatoes to the skillet. Stir to combine.
Add cooked pasta to the skillet and mix well.
Transfer mixture to a casserole dish. Top with shredded cheddar and mozzarella cheese.
Bake in preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
Serve hot.

Great for a quick weeknight meal!
