Instructions:
Preheat oven to 350°F (175°C).
In a large mixing bowl, combine potatoes, cheddar cheese, sour cream, cream of chicken soup, green onions, bacon, salt, and pepper.
Transfer the mixture to a greased baking dish.
Bake in the preheated oven for 45 minutes, or until the top is golden and bubbly.
Let it cool for a few minutes before serving.
Notes:
Feel free to add more cheese on top before baking for an extra cheesy crust.
