Italian Sausage Tater Tot Casserole

Ingredients:

  • 1 lb Italian sausage casings removed
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 can cream of mushroom soup 10.5 oz
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 bag frozen tater tots 32 oz

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook the Italian sausage over medium heat until browned. Drain excess fat.
  • Add chopped onion and minced garlic to the skillet. Cook until the onion is translucent.
  • In a large bowl, combine the cooked sausage mixture, cream of mushroom soup, sour cream, and 1 cup of shredded cheddar cheese.
  • Spread the mixture evenly in a baking dish. Top with an even layer of frozen tater tots.
  • Bake in the preheated oven for 30 minutes. Remove from oven and sprinkle the remaining 1 cup of shredded cheddar cheese on top.
  • Return to oven and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
  • Let cool for a few minutes before serving.

Notes:

This casserole is a great make-ahead meal. You can assemble it the night before and bake it the next day.
