Ingredients:  

Main Ingredients

  • 6 eggs
  • 1 cup salsa
  • 1 cup shredded cheese
  • 1 cup black beans rinsed and drained
  • 1 cup corn frozen or canned
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tbsp olive oil
  • 1 salt and pepper to taste

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, whisk the eggs with salt and pepper.
  • Heat olive oil in a pan over medium heat. Add the black beans, corn, cumin, and chili powder. Cook for 5 minutes.
  • In a baking dish, layer the bean mixture, followed by salsa, and then pour the whisked eggs over the top.
  • Sprinkle shredded cheese on top.
  • Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving.

Notes:

Feel free to add some chopped cilantro or avocado on top for extra flavor.
