Instructions:
Preheat your oven to 375°F (190°C).
In a mixing bowl, whisk the eggs with salt and pepper.
Heat olive oil in a pan over medium heat. Add the black beans, corn, cumin, and chili powder. Cook for 5 minutes.
In a baking dish, layer the bean mixture, followed by salsa, and then pour the whisked eggs over the top.
Sprinkle shredded cheese on top.
Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the cheese is melted and bubbly.
Let it cool for a few minutes before serving.
Notes:
Feel free to add some chopped cilantro or avocado on top for extra flavor.
