Ingredients:  

Main Ingredients

  • 1 lb Ground Beef
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 2 cups Frozen Mixed Vegetables
  • 2 cups Beef Broth
  • 4 cups Mashed Potatoes
  • 1 cup Shredded Cheddar Cheese

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add chopped onion and minced garlic to the skillet. Cook until softened.
  • Stir in frozen mixed vegetables and beef broth. Simmer for 5 minutes.
  • Transfer beef mixture to a baking dish. Spread mashed potatoes over the top.
  • Sprinkle shredded cheddar cheese over the mashed potatoes.
  • Bake in preheated oven for 20-25 minutes, until cheese is melted and bubbly.

Notes:

This casserole can be made ahead and refrigerated. Just add an extra 10 minutes to the baking time.
