Instructions:
Preheat oven to 375°F (190°C).
In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
Add chopped onion and minced garlic to the skillet. Cook until softened.
Stir in frozen mixed vegetables and beef broth. Simmer for 5 minutes.
Transfer beef mixture to a baking dish. Spread mashed potatoes over the top.
Sprinkle shredded cheddar cheese over the mashed potatoes.
Bake in preheated oven for 20-25 minutes, until cheese is melted and bubbly.
Notes:
This casserole can be made ahead and refrigerated. Just add an extra 10 minutes to the baking time.
