Instructions:
Preheat oven to 375°F (190°C).
In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, cook until softened.
Add ground beef to the skillet, cook until browned. Season with salt and pepper.
Transfer the beef mixture to a baking dish. Spread mashed potatoes evenly over the top.
Sprinkle shredded cheddar cheese on top of the mashed potatoes.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Let the casserole cool for a few minutes before serving.
Notes:
Feel free to add vegetables like peas or carrots for extra nutrition.
