Ingredients:

  • 2 cups cooked rice
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 can diced green chiles 4 oz
  • 1 tsp salt
  • 1 tsp black pepper

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a mixing bowl, combine cooked rice, sour cream, shredded cheddar cheese, diced green chiles, salt, and black pepper.
  • Transfer the mixture to a baking dish and spread evenly.
  • Bake in the preheated oven for 45 minutes, or until the top is golden and bubbly.
  • Let it cool for a few minutes before serving.

Notes:

Feel free to add some cooked chicken or ground beef for a heartier meal.
