Ingredients:  

Main Ingredients

  • 4 cups gluten-free bread, cubed
  • 2 cups sauerkraut, drained
  • 1 pound corned beef, sliced
  • 2 cups Swiss cheese, shredded
  • 1 cup Thousand Island dressing

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the cubed gluten-free bread, sauerkraut, corned beef, and Swiss cheese.
  • Spread the mixture evenly into a baking dish.
  • Drizzle the Thousand Island dressing over the top of the mixture.
  • Bake in the preheated oven for 45 minutes, or until the top is golden and bubbly.
  • Let it cool for a few minutes before serving.

Notes:

For a crispier top, you can broil the casserole for the last 5 minutes of baking.
