Ingredients:  

Main Ingredients

  • 6 cups carrots, sliced
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup bread crumbs
  • 1/4 cup melted butter
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a large pot, cook the sliced carrots until tender. Drain and set aside.
  • In a mixing bowl, combine the sour cream, shredded cheddar cheese, salt, and pepper.
  • Add the cooked carrots to the mixture and stir well.
  • Transfer the mixture to a baking dish.
  • In a small bowl, mix the bread crumbs with the melted butter. Sprinkle over the carrot mixture.
  • Bake in the preheated oven for 30 minutes or until the top is golden brown.

Notes:

This casserole can be prepared a day ahead and baked just before serving.
