Instructions:
Preheat your oven to 350°F (175°C).
In a large pot, cook the sliced carrots until tender. Drain and set aside.
In a mixing bowl, combine the sour cream, shredded cheddar cheese, salt, and pepper.
Add the cooked carrots to the mixture and stir well.
Transfer the mixture to a baking dish.
In a small bowl, mix the bread crumbs with the melted butter. Sprinkle over the carrot mixture.
Bake in the preheated oven for 30 minutes or until the top is golden brown.
Notes:
This casserole can be prepared a day ahead and baked just before serving.
