Ingredients:  

Main Ingredients

  • 1 head Cauliflower chopped into florets
  • 2 cups Spinach fresh
  • 1 cup Cheddar Cheese shredded
  • 1 cup Milk
  • 2 tbsp Butter
  • 2 tbsp Flour
  • 1 tsp Salt
  • 0.5 tsp Black Pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • Steam the cauliflower florets until tender, about 5-7 minutes.
  • In a large mixing bowl, combine the steamed cauliflower, fresh spinach, and shredded cheddar cheese.
  • In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes.
  • Gradually whisk in the milk, continuing to cook until the mixture thickens. Season with salt and black pepper.
  • Pour the sauce over the cauliflower mixture and stir to combine.
  • Transfer the mixture to a baking dish and bake for 20-25 minutes, until the top is golden and bubbly.

Notes:

Feel free to add other vegetables like broccoli or bell peppers for more variety.
