Instructions:
Preheat your oven to 375°F (190°C).
Steam the cauliflower florets until tender, about 5-7 minutes.
In a large mixing bowl, combine the steamed cauliflower, fresh spinach, and shredded cheddar cheese.
In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes.
Gradually whisk in the milk, continuing to cook until the mixture thickens. Season with salt and black pepper.
Pour the sauce over the cauliflower mixture and stir to combine.
Transfer the mixture to a baking dish and bake for 20-25 minutes, until the top is golden and bubbly.
Notes:
Feel free to add other vegetables like broccoli or bell peppers for more variety.
