Instructions:
Preheat the oven to 375°F (190°C).
Cook the pasta according to package instructions. Drain and set aside.
In a large pot, melt the butter over medium heat. Add the flour and cook, stirring constantly, for 1 minute.
Gradually whisk in the milk and cook until the mixture thickens, about 5 minutes.
Add the cheese, salt, and pepper to the pot, stirring until the cheese is melted and the sauce is smooth.
Stir in the cooked pasta and butternut squash cubes until everything is well combined.
Transfer the mixture to a baking dish and bake for 25-30 minutes, until the top is golden and bubbly.
Let the casserole cool for a few minutes before serving.
Notes:
This casserole can be made ahead and refrigerated before baking. Just add an extra 10 minutes to the baking time if baking from cold.
