Ingredients:  

Main Ingredients

  • 1 large Butternut Squash peeled and cubed
  • 8 oz Pasta any short pasta
  • 1 cup Shredded Cheese cheddar or mozzarella
  • 2 cups Milk
  • 2 tbsp Butter
  • 2 tbsp Flour
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions: 

  • Preheat the oven to 375°F (190°C).
  • Cook the pasta according to package instructions. Drain and set aside.
  • In a large pot, melt the butter over medium heat. Add the flour and cook, stirring constantly, for 1 minute.
  • Gradually whisk in the milk and cook until the mixture thickens, about 5 minutes.
  • Add the cheese, salt, and pepper to the pot, stirring until the cheese is melted and the sauce is smooth.
  • Stir in the cooked pasta and butternut squash cubes until everything is well combined.
  • Transfer the mixture to a baking dish and bake for 25-30 minutes, until the top is golden and bubbly.
  • Let the casserole cool for a few minutes before serving.

Notes:

This casserole can be made ahead and refrigerated before baking. Just add an extra 10 minutes to the baking time if baking from cold.
