Ingredients:  

Main Ingredients

  • 1 large Butternut Squash peeled, seeded, and cubed
  • 1 lb Italian Sausage casings removed
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Chicken Broth
  • 1 cup Heavy Cream
  • 1 cup Shredded Cheese cheddar or your choice
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook sausage over medium heat until browned. Remove and set aside.
  • In the same skillet, add onion and garlic. Cook until softened.
  • In a large mixing bowl, combine butternut squash, sausage, onion, garlic, chicken broth, heavy cream, salt, and pepper.
  • Transfer mixture to a baking dish. Top with shredded cheese.
  • Bake for 40 minutes or until squash is tender and top is golden brown.
  • Let cool for a few minutes before serving.

Notes:

Feel free to add other vegetables like spinach or kale for extra nutrition.
