Ingredients:  

Main Ingredients

  • 1 cup brown rice uncooked
  • 2 cups vegetable broth
  • 1 cup shredded cheese cheddar or your choice
  • 1 cup broccoli florets chopped
  • 1 cup mushrooms sliced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • to taste salt and pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the uncooked brown rice and vegetable broth.
  • Stir in the chopped broccoli, sliced mushrooms, chopped onion, minced garlic, and olive oil.
  • Season with salt and pepper to taste.
  • Transfer the mixture to a baking dish and cover with aluminum foil.
  • Bake in the preheated oven for 45 minutes, or until the rice is tender and the liquid is absorbed.
  • Remove the foil, sprinkle the shredded cheese on top, and bake for an additional 5-10 minutes, until the cheese is melted and bubbly.
  • Let the casserole cool for a few minutes before serving. Enjoy!

Feel free to add other vegetables or proteins to customize this casserole to your liking.
