Ingredients:  

Main Ingredients

  • 1 lb ground beef
  • 1 cup uncooked rice
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup shredded cheddar cheese
  • 1 cup beef broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent.
  • Stir in the uncooked rice, diced tomatoes, beef broth, salt, and pepper. Bring to a boil.
  • Transfer the mixture to a baking dish. Cover with foil and bake for 30 minutes.
  • Remove the foil and sprinkle the shredded cheddar cheese on top. Bake for an additional 15 minutes, or until the cheese is melted and bubbly.
  • Let the casserole sit for a few minutes before serving. Enjoy!

Notes:

This casserole can be made ahead and refrigerated. Just add a few extra minutes to the baking time if baking from cold.
