beef broth

onion, chopped

garlic, minced

Instructions:
Preheat your oven to 350°F (175°C).
In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent.
Stir in the uncooked rice, diced tomatoes, beef broth, salt, and pepper. Bring to a boil.
Transfer the mixture to a baking dish. Cover with foil and bake for 30 minutes.
Remove the foil and sprinkle the shredded cheddar cheese on top. Bake for an additional 15 minutes, or until the cheese is melted and bubbly.
Let the casserole sit for a few minutes before serving. Enjoy!
Notes:
This casserole can be made ahead and refrigerated. Just add a few extra minutes to the baking time if baking from cold.
