Ingredients:  

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups vegetable broth
  • 1 cup chopped bell peppers any color
  • 1 cup chopped zucchini
  • 1 cup chopped tomatoes
  • 1 cup shredded cheese cheddar or mozzarella
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes or until quinoa is cooked.
  • In a mixing bowl, combine cooked quinoa, bell peppers, zucchini, tomatoes, salt, and pepper. Mix well.
  • Transfer the mixture to a baking dish and top with shredded cheese.
  • Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving. Enjoy!

Notes:

You can add other vegetables like spinach or mushrooms for extra flavor.
