chopped bell peppers

cheddar or mozzarella

Instructions:
Preheat your oven to 375°F (190°C).
In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes or until quinoa is cooked.
In a mixing bowl, combine cooked quinoa, bell peppers, zucchini, tomatoes, salt, and pepper. Mix well.
Transfer the mixture to a baking dish and top with shredded cheese.
Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.
Let it cool for a few minutes before serving. Enjoy!
Notes:
You can add other vegetables like spinach or mushrooms for extra flavor.
