Instructions:
Preheat your oven to 375°F (190°C).
Cook the pasta according to the package instructions. Drain and set aside.
In a saucepan, heat the olive oil over medium heat. Add the garlic and sauté until fragrant.
Add the chopped vegetables to the saucepan and cook until they are tender.
Stir in the tomato sauce, salt, and black pepper. Simmer for 5 minutes.
In a mixing bowl, combine the cooked pasta and the sauce mixture. Mix well.
Transfer the pasta mixture to a baking dish. Top with vegan cheese.
Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool for a few minutes before serving.
Notes:
Feel free to add your favorite herbs and spices to the sauce for extra flavor.
