Instructions:
Preheat your oven to 375°F (190°C).
In a skillet, cook the sausage over medium heat until browned. Drain excess fat.
Add the sliced squash and chopped onion to the skillet. Cook until tender.
Transfer the sausage and vegetable mixture to a baking dish. Sprinkle with shredded cheddar cheese and breadcrumbs.
Bake in the preheated oven for 20 minutes or until the top is golden brown.
Season with salt and black pepper to taste. Serve warm.
Notes:
Feel free to add other vegetables like zucchini or bell peppers.
