Instructions:
Preheat oven to 375°F (190°C).
In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, cook until softened.
Add ground beef to the skillet, cook until browned. Season with salt and pepper.
In a baking dish, layer the sliced squash and cooked ground beef mixture. Top with shredded cheese.
Bake in the preheated oven for 30-35 minutes, until the cheese is melted and bubbly.
Let it cool for a few minutes before serving.
Notes:
Feel free to add other vegetables like bell peppers or zucchini for extra flavor.
