Ingredients:  

Main Ingredients

  • 1 lb ground beef
  • 1 can black beans drained and rinsed
  • 1 can corn drained
  • 1 cup salsa
  • 2 cups shredded cheese Mexican blend
  • 1 packet taco seasoning
  • 1 cup sour cream

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add taco seasoning to the beef and stir well.
  • In a large bowl, combine beef, black beans, corn, salsa, and half of the shredded cheese.
  • Transfer mixture to a baking dish and spread evenly.
  • Top with remaining cheese.
  • Bake in preheated oven for 20-25 minutes, until cheese is melted and bubbly.
  • Remove from oven and let cool for a few minutes before serving. Top with sour cream if desired.

Notes:

Feel free to add extra toppings like chopped cilantro, diced tomatoes, or sliced jalapeños.
