Instructions:
Preheat oven to 350°F (175°C).
In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
In a large bowl, combine cooked beef, uncooked rice, cream of mushroom soup, diced tomatoes, salt, and pepper.
Transfer mixture to a baking dish and cover with foil.
Bake in preheated oven for 45 minutes.
Remove foil, sprinkle with shredded cheddar cheese, and bake for an additional 10 minutes, or until cheese is melted and bubbly.
Let cool for a few minutes before serving.
Notes:
Feel free to add your favorite vegetables to the mix for extra flavor and nutrition.
