Christmas Vegetable Casserole Recipe

Ingredients:  

Main Ingredients

  • 2 cups Broccoli florets
  • 2 cups Cauliflower florets
  • 1 cup Carrots, sliced
  • 1 cup Green beans, chopped
  • 1 cup Cheddar cheese, shredded
  • 1 cup Milk
  • 2 tbsp Butter
  • 2 tbsp All-purpose flour
  • 1 tsp Salt
  • 1 tsp Black pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large pot, bring water to a boil and blanch the broccoli, cauliflower, carrots, and green beans for 3-4 minutes. Drain and set aside.
  • In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes.
  • Gradually whisk in the milk, cooking until the mixture thickens. Add salt and pepper.
  • Remove from heat and stir in half of the shredded cheese until melted.
  • In a large mixing bowl, combine the blanched vegetables and cheese sauce. Transfer to a baking dish.
  • Sprinkle the remaining cheese on top.
  • Bake in the preheated oven for 25-30 minutes, until the top is golden and bubbly.
  • Let it cool for a few minutes before serving.

Notes:

This casserole can be prepared a day in advance and baked just before serving.
