Instructions:
Preheat your oven to 375°F (190°C).
In a large pot, bring water to a boil and blanch the broccoli, cauliflower, carrots, and green beans for 3-4 minutes. Drain and set aside.
In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes.
Gradually whisk in the milk, cooking until the mixture thickens. Add salt and pepper.
Remove from heat and stir in half of the shredded cheese until melted.
In a large mixing bowl, combine the blanched vegetables and cheese sauce. Transfer to a baking dish.
Sprinkle the remaining cheese on top.
Bake in the preheated oven for 25-30 minutes, until the top is golden and bubbly.
Let it cool for a few minutes before serving.
Notes:
This casserole can be prepared a day in advance and baked just before serving.
