crushed Ritz crackers

Instructions:
Preheat your oven to 350°F (175°C).
In a large pot, boil the squash and onion until tender. Drain well.
In a mixing bowl, combine the squash and onion with the cheddar cheese, sour cream, salt, and pepper.
Pour the mixture into a baking dish.
In another bowl, mix the crushed Ritz crackers with the melted butter. Sprinkle over the squash mixture.
Bake for 25-30 minutes, or until the top is golden brown.
