Ingredients:

  • 4 cups sliced yellow squash
  • 1 cup chopped onion
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup crushed Ritz crackers
  • 1/2 cup melted butter
  • to taste salt and pepper

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a large pot, boil the squash and onion until tender. Drain well.
  • In a mixing bowl, combine the squash and onion with the cheddar cheese, sour cream, salt, and pepper.
  • Pour the mixture into a baking dish.
  • In another bowl, mix the crushed Ritz crackers with the melted butter. Sprinkle over the squash mixture.
  • Bake for 25-30 minutes, or until the top is golden brown.
