Ingredients:  

Main Ingredients

  • 1 lb Asparagus trimmed and cut into 1-inch pieces
  • 1 cup Peas fresh or frozen
  • 4 Eggs hard-boiled and chopped
  • 1 cup Milk
  • 2 tbsp Butter
  • 2 tbsp Flour
  • 1 cup Cheddar Cheese shredded
  • to taste Salt and Pepper

Instructions: 

  • Preheat oven to 350°F (175°C).
  • Boil asparagus and peas until tender. Drain and set aside.
  • In a pot, melt butter and stir in flour to make a roux. Gradually add milk, stirring constantly until thickened.
  • Add cheese to the sauce and stir until melted. Season with salt and pepper.
  • Combine asparagus, peas, boiled eggs, and cheese sauce. Pour into a baking dish.
  • Bake for 20-25 minutes until bubbly and golden on top.

Great for a springtime meal!
