Ingredients:  

Main Ingredients

  • 4 cups sliced yellow squash
  • 1 cup chopped onion
  • 1 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 2 units eggs, beaten
  • 1 cup crushed crackers
  • 1 tsp salt
  • 1 tsp black pepper

Instructions: 

  • Preheat oven to 350°F (175°C).
  • In a large pot, boil squash and onion in water until tender. Drain well.
  • In a mixing bowl, combine squash, onion, mayonnaise, cheese, eggs, salt, and pepper.
  • Pour mixture into a baking dish. Top with crushed crackers.
  • Bake for 30 minutes or until golden brown.
