Ingredients:  

Main Ingredients

  • 4 cups spinach fresh, chopped
  • 3 cups potatoes peeled and diced
  • 6 eggs beaten
  • 1 cup milk
  • 1 cup cheddar cheese shredded
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a large mixing bowl, combine the beaten eggs, milk, salt, and pepper. Whisk until well mixed.
  • Add the chopped spinach, diced potatoes, and shredded cheddar cheese to the egg mixture. Stir until everything is evenly distributed.
  • Pour the mixture into a greased baking dish.
  • Bake in the preheated oven for 45 minutes, or until the top is golden brown and the casserole is set.
  • Let it cool for a few minutes before serving.

Notes:

This casserole can be prepared the night before and baked in the morning. Just cover and refrigerate overnight.
