Instructions:
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine the beaten eggs, milk, salt, and pepper. Whisk until well mixed.
Add the chopped spinach, diced potatoes, and shredded cheddar cheese to the egg mixture. Stir until everything is evenly distributed.
Pour the mixture into a greased baking dish.
Bake in the preheated oven for 45 minutes, or until the top is golden brown and the casserole is set.
Let it cool for a few minutes before serving.
Notes:
This casserole can be prepared the night before and baked in the morning. Just cover and refrigerate overnight.
