Ingredients:  

Main Ingredients

  • 1 lb Ground beef
  • 1 can Black beans drained and rinsed
  • 1 cup Corn kernels frozen or canned
  • 1 cup Salsa
  • 2 cups Shredded cheese cheddar or Mexican blend
  • 1 packet Taco seasoning
  • 1 cup Cooked rice

Instructions: 

  • Preheat oven to 375°F (190°C).
  • In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add taco seasoning to the beef and cook according to package instructions.
  • In a large mixing bowl, combine cooked beef, black beans, corn, salsa, cooked rice, and 1 cup of shredded cheese.
  • Transfer the mixture to a baking dish and spread evenly.
  • Top with remaining 1 cup of shredded cheese.
  • Bake in preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
  • Let cool for a few minutes before serving. Enjoy!

Notes:

Feel free to add your favorite toppings like sour cream, avocado, or cilantro.
