Instructions:
Preheat oven to 375°F (190°C).
In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
Add taco seasoning to the beef and cook according to package instructions.
In a large mixing bowl, combine cooked beef, black beans, corn, salsa, cooked rice, and 1 cup of shredded cheese.
Transfer the mixture to a baking dish and spread evenly.
Top with remaining 1 cup of shredded cheese.
Bake in preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
Let cool for a few minutes before serving. Enjoy!
