Ingredients:  

Main Ingredients

  • 1 cup lentils rinsed and drained
  • 4 links sausage sliced
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz
  • 2 cups chicken broth
  • 1 tsp thyme dried
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions: 

  • Preheat your oven to 375°F (190°C).
  • In a skillet, cook the sausage over medium heat until browned. Remove and set aside.
  • In the same skillet, add the onion and garlic. Cook until softened.
  • In a casserole dish, combine the lentils, sausage, onion, garlic, diced tomatoes, chicken broth, thyme, salt, and pepper.
  • Cover the dish with foil and bake for 45 minutes, or until the lentils are tender.
  • Remove the foil and bake for an additional 10 minutes to allow the top to brown slightly.
  • Serve hot and enjoy!

Notes:

This casserole is perfect for a cozy dinner. Feel free to add more vegetables like carrots or celery.
