Instructions:
Preheat your oven to 375°F (190°C).
In a skillet, cook the sausage over medium heat until browned. Remove and set aside.
In the same skillet, add the onion and garlic. Cook until softened.
In a casserole dish, combine the lentils, sausage, onion, garlic, diced tomatoes, chicken broth, thyme, salt, and pepper.
Cover the dish with foil and bake for 45 minutes, or until the lentils are tender.
Remove the foil and bake for an additional 10 minutes to allow the top to brown slightly.
Serve hot and enjoy!
Notes:
This casserole is perfect for a cozy dinner. Feel free to add more vegetables like carrots or celery.
