Instructions:
Preheat your oven to 350°F (175°C).
Season the lamb chops with salt and pepper.
In a casserole dish, layer the potatoes, carrots, and onions.
Place the lamb chops on top of the vegetables.
Pour the beef broth over the lamb and vegetables.
Cover the dish with foil and bake for 60 minutes.
Remove the foil and bake for an additional 10 minutes to brown the lamb chops.
