Ingredients:

  • 4 cups sliced squash
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 can cream of chicken soup
  • 1 cup crushed Ritz crackers
  • 1/2 cup melted butter

Instructions: 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the squash, cheddar cheese, sour cream, and cream of chicken soup.
  • Pour the mixture into a greased baking dish.
  • In a separate bowl, mix the crushed Ritz crackers with the melted butter.
  • Sprinkle the cracker mixture over the top of the squash mixture.
  • Bake for 40 minutes, or until the top is golden brown and the casserole is bubbly.
